How can satellite sensors "see" crop health ?

Before the symptoms become visible in stressed or sick plants, the stress factor has already started to affect the cellular structure of the leaves. This affects the plant reflectance in the near infrared.

Remote sensing provides us with data from the near-infrared region of the electromagnetic spectrum (not visible to the human eye) which help us identify stressed plants.
